Coconut Pandan Marble Cake




A white cake mix is like a blank sheet of paper - it can be made into something quite different, only limited by your imagination. I had the idea to make a coconut cake out of white cake mix, since both are white, and to make a marble effect with pandan essence to reduce the monotony.

Just follow cake mix directions, but substitute coconut cream for the water.  Take one bowl of batter out and add pandan essence. Pour half white batter into baking pan, place spoonfuls of half  the pandan batter on it, pour in the rest of the white batter, then top with remaining pandan batter. Finally stir with a single chopstick or a wooden skewer for marble effect.

For the Coconut Cream Frosting:  Follow my Whipped Cream recipe, but use Coconut Cream instant pudding mix instead of vanilla flavor.
