Carrot Cake

4 eggs
1 1/2 cups oil
1 1/4 cup sugar
2 tsp vanilla
1 cup nuts
1 cup raisins
1/2 tsp salt
3 cups shredded carrots
8 oz can crushed pineapple, drained
3 cups flour
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
2 tsp baking powder
1 tsp baking soda

Stir dry ingredients together. Beat eggs, add the other ingredients. Stir in flour mixture.
Bake in 2 loaf pans or 13x9 pan at 350 deg for one hour.
Cover with Cream Cheese Frosting if desired.
